Did you know that cauliflower is high in Vitamin C? It’s also high in fiber and aids in fighting inflammation in the body. This makes a great, easy (and healthy) side dish for grilled chicken or roasted fish!
Roasted Lemon-Caper Cauliflower
- 1 large head of Cauliflower–cleaned and cut into florets.
- 1 jar of Gargano & Co’s Lemon Caper Piccante sauce
- Extra Virgin Olive Oil
- Coarse Sea Salt
Preheat oven to 400 degrees. Place cauliflower on a baking sheet and drizzle with 1 Tablespoon olive oil and 1/3 of a cup of Piccante Sauce. Toss to combine and sprinkle with 1 scant teaspoon of sea salt. Roast—stirring occasionally–until cauliflower is cooked through and golden brown or about 30-40 minutes. Can be served warm or room temperature. Serves 4-6 as a vegetable side dish.
