Roasted Lemon-Caper Cauliflower
- 1 large head of Cauliflower–cleaned and cut into florets.
- 1 jar of Gargano & Co’s Lemon Caper Piccante sauce
- Extra Virgin Olive Oil
- Coarse Sea Salt
It’s cold out there….and we’re staying warm with lots of slow simmering stews. This one was submitted to us by one of our favorite vegan home cooks + foodies-Cheryl Breuer. We think you will enjoy this healthy and easy to make winter stew!
This idea is so simple and quick that we hesitate to even call it a recipe. Preheat oven to 375, Pour a jar of our Classic Tomato Sauce in an oven safe baking dish. Cut a log of goat cheese into medallions then place them on top of the tomato sauce. Bake in the oven for about 15-20 minutes or until completely warm and slightly bubbly. Serve with good crusty bread for an incredibly easy, delicious and elegant appetizer!
Easy (and Elegant) Spinach-Artichoke Dip
- 1 jar of creamy ‘Livornese alla Peppino’ sauce
- 16 oz bag of frozen whole leaf spinach
- 2 14 oz cans of Artichoke Hearts chopped roughly
- 12 oz grated Fontina Cheese (Provolone cheese may be substituted)
- 3 oz grated Parmesan Cheese (use Parmigiano-Reggiano if possible
Preheat oven to 400 degrees. Pour all ingredients in a large bowl and mix thoroughly with a large spoon. Pour into a large oven safe dish and bake for 35-40 minutes or until bubbly and slightly golden at edges. Serve with sliced baguette or crackers. This will serve 10-12 as an appetizer. Enjoy!

Italian White Bean Chlli
The weather has gotten cold and there’s nothing we like more than the smell of a pot of soup simmering on the stove on a winter afternoon. This recipe makes it easy for you—we’ve have cut the prep time down to under 2 minutes—but your house will smell like you’ve been cooking all day!
Gargano & Co’s Homemade Lentil Soup
- 1 jar Gargano & Co Cacciatore Simmer Sauce
- 2/3 cup dry lentils
- 2 cups stock (Chicken, Beef or Vegetable stock will all work)
- Red pepper flakes
- Freshly grated parmesan cheese
Add lentils, stock and Cacciatore Simmer Sauce (chock full of hand chopped celery, peppers, mushrooms and carrots) to a dutch oven or large heavy bottom pot. Add red pepper flakes to taste. We like a generous pinch or two to add a little heat. Bring to a simmer over medium high heat. Reduce heat immediately to a low simmer and cover with a lid. Allow to cook—stirring occasionally for about 45 minutes or until lentils are cooked to your taste. Garnish with freshly grated parmesan cheese and serve with crusty Italian bread for an easy lunch or dinner on a cold winter’s day. Serves 4.
